    I was so excited to get this cookbook, but when it arrived today i was so utterly disappointed. I was expecting something that had tons of recipes in it that could help me with my reactive hypoglycemia. Instead, I got something that looks like it was written and formatted for elementary school students. It’s in a huge font in black and white with a single recipe per page without any pictures or supplemental nutritional information. There’s no preface about what reactive hypoglycemia is or why you should or shouldn’t follow the recipes in the book. Given the content, they could have easily saved trees by putting all of the recipes in a much smaller compact book, but then i guess they wouldn’t have gotten me to stupidly shell out the $20 for it. Almost everything in here is very basic and stuff that you can find elsewhere. If you’re having trouble with reactive hypoglycemia, read up on it and then modify other recipes based on the information you find rather than shelling out for this book because it’s way over priced for what you get.

    pretty disappointing overall…. most of the recipes are very basic and aren’t much more than what I would have done on my own experimenting in the kitchen. It wasn’t worth the money.

    This is a great cookbook for anyone trying to replace some of the meat in their diets, cut back on sugar, or incorporate some of the healthy benefits of tofu! The dishes contain very basic, easy-to-find ingredients (with the exception of the Eggplant curry and Chick’n Kofta curry, where I had to go to a specialty store for the garam masala and naan), and the techniques are well-known to even an occasional cook. (If you’ve never cooked before, you will need something more detailed and complete.)

    The recipes are very “American”–featuring things chicken noodle soup, quesadillas, and lasagna, with a few Indian-inspired dishes thrown in for spice, and as I said, very simple recipes for a busy cook.

    Two of my favorite recipes so far are the Egg Salad Sandwich (although I add a touch of Tabasco to the egg mixture) and the Sweet Potato Chili fries. Everything in this book just feels like health-food made tasty (or tasty food made healthy?! But that doesn’t sound as good). The Red Pepper Hummus is next on my list…thanks, Stephanie!

    Stephanie Kenrose’s book is awesome. I got it because it’s a vegetarian cookbook – I have a mild case of Reactive Hypoglycemia, but I’ve found that it’s very manageable through diet and exercise. This cookbook is a great place to find tips and recipes for a healthy lifestyle even if you don’t have hypoglycemia. Actually, it would be perfect for someone who is trying to explore vegetarianism.

    The beginning of the book has a brief intro to some of the ingredients that are called for in the recipes, and there is also a page of simple snack ideas (bread and peanut butter, fruit, etc…).

    Then Stephanie jumps right into the recipes. They are all pretty straightforward and easy to follow. Her directions are clear and there aren’t any huge ingredient lists. You definitely don’t have to be an expert to make any of the recipes. There are a bunch of different sections – fast food (healthified), treats (my favorites!), “vegetarian specialties” (like lasagna, enchiladas, quiche, etc…), breakfasts, and slow cooker recipes.

    My favorites so far have been the “Harvest Soup”, “Flaxseed French Toast”, “Grilled Portobello Mushrooms”, “Strawberry-Poppy Seed Salad”, “Key Lime Pie”, and the Sweet Potato Fries (holy yum). I had to leave out the nuts from the French toast (didn’t have any), but it was still great. I added a little bit of cinnamon to the Sweet Potato Fries too – these were really good.

    Some of the recipes are what I would call “semi homemade” – meaning that they call for pre-made ingredients like frozen sweet potato fries, or veggie burgers. When I made the fries I just used regular sweet potatoes; I don’t usually buy the packaged stuff. But I think most of the recipes you could easily sub in other things if you don’t have whatever product it calls for – like how I just subbed fresh sweet potatoes.

    Overall, a fun book with lots of good ideas. I highly recommend it :)
